DIFFERENT TYPES OF RICE are used to different effect in Indian cooking. The most famous is the aromatic long-grained Basmati rice, used to add an extra subtle flavor to Biryanis and other preparations. Try the Saffron or Jeera rice as a side of your curry dish, for something special, order one of the Biryani rice dishes and enjoy the subtle taste. Biryani dishes are cooked risotto-style, with the spices and other ingredients added to the pot as the rice is boiling and are served with the yoghurt-based Vegetable Raita as a side dish.
